Sour Gummy bear recipe

Remember this mixture becomes very hot and parental supervision is recommended!

1 cup frozen fruit - Raspberries, blueberries etc defrosted

1/3 c water

1 Table spoon lemon juice

2 Tablespoons honey

4 teaspoons unflavoured gelatine

1 /2 c icing sugar

1-3 teaspoons citric acid

Puree fruit in blender until smooth, Combine first four ingredients in a small pot over a medium heat. When it comes to a simmer gradually sprinkle and whisk in the gelatine. Continue heating over a medium heat until it comes to a simmer and all ingredients are well combined. Take off heat and pass through a sieve to remove any fruit bits. If there are bubbles on the top remove them with a spoon. Pour into silicone moulds and place in fridge for a minimum of 6 hours. Any air bubbles just pop with a tooth pick. Carefully pop out gummy bears and store in an air tight container. Mix together the sugar and citric acid and toss the bears until well coated. Don't store in fridge as can become slimy. If you don't want sour just add sugar in with the first four ingredients.
